Cooking reminds me of math. I appreciate peopleâs skill at it but itâs all Greek to me. I wanted to learn the basics of cooking so I wouldnât get lost as the process advanced. I feel this basic training series achieves that.When Chef Briwa started out explaining the difference between savory and sweet, I was a little worried this series would be too slow even for me. However, it picks up to a good pace so youâre engaged but not overwhelmed or lost.Disc 1 covers what tools you should have in your kitchen to start cooking. If you donât know what knife, pot, or pan does what or why, then you will LOVE this section! Iâm so green I made a spreadsheet so I would know what to buy for cooking supplies.Disc 2 finishes the cooking techniques (sauté, roast, fry, stir fry, poach, braise, stew, grill, broil) started on Disc 1. I learned my cooking was poor because I didnât use enough oil (avoiding fat) and I boiled (rushing to eat) than simmered food. Briwa also covers how to make stocks and grind spices for rubs so your entrees taste fresher and more flavorful than using pre-made ingredients.Disc 3 starts with sauces and moves towards simple dishes of grains, beans, salads, eggs, soups, and pastas. Always use a non-stick pan and silicone spatula for eggs. Butter or oil instead of a spray. On the pasta section, Briwa uses a food processor and a pasta making machine while I was hoping heâd use a Kitchen Aid mixer and the pasta maker attachment so I can learn how to use mine.Disc 4 wraps it up with meat, seafood, vegetables, wine pairing, and âadultâ desserts (less sweet, more alcohol). He demystifies dishes like Prime Rib, teaches you a trick on how to make pork loins more juicy without adding fat, shows you how to pick fresh whole fish or shellfish, and how to make vegetables exciting. Overall, he makes cooking seem less intimidating for the newbie.I also ordered another Great Courses DVD âEveryday Guide To Wine.â Briwa gave a ten minute lecture on how to use wine as another flavor to your dining experience but I want more in depth information. I canât wait to use the knowledge at my next dinner party.

TheCulinary Institute of America is the best chef school in the world. Chef Briwa has tons of cooking knowledge,presentation,procedures and common sense methods that works well in all kitchens,professional or domestic.

As a chef of many years most of it is not new to me but oftentimes I do things right without knowing exactly why and here is where Chef Briwa has a lot of answers,he transports love of food,methodic set up ( mise en place) ans fluent cooking and teaches how important it is to give some food ( be it batter,dough or meat) a moment to rest I recommend this course to all foidies for instruction or confirmation of what they already know I would give five stars but the fact that I had to pay an additional 7$ for customs which was not mentioned before makes it 4 stars as a reflection on the seller not the product itself
