Chef Briwa vast wealth of knowledge in all things culinary is astounding. He reminds me of my culinary instructors and professors when I was in culinary school. I was fortunate enough to attend a top rated culinary institution and it was one of the best experiences of my life.

The series is excellent for techniques and some information about the possibilities for each vegetable, but it is almost impossible to make the recipes, since there are no quantities of ingredients in the video and I can’t see how to get any recipes in the Amazon channel. In the actual Great Courses app, you can get copies of the recipes to print out and use.

This is a wonderful series, I hope to see more from this chef, not only are the recipes good but he provides excellent information. To be instructed by a chef from the Culinary Institute of America is an awesome opportunity.

Mediocre at best. There are much better chefs to watch.
Seems to focus more on presentation than taste.Uses a ton of expensive ingredients without taking the time to talk about different alternatives.Is overly wasteful. Throws out all sorts of things while cooking.He doesn’t seem to cover different options to save time. Like cooking different things on the stove top, or together.If someone were to follow him exactly they’d be spending a ton of money, and a ton of time.It seems either mostly for entertainment, or better for those that already know well how to cook and can modify everything he’s doing according to the ingredients they have, or their particular tastes.Also, despite it being “Cooking with Vegetable” a few of the dishes featured meat as a prominent flavor.
